Ingredients
  

  • 2 to 3 large eggs
  • 1/2 cup canned black beans, drained and rinsed
  • 1 large flour tortilla (10 inches)
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons salsa
  • optional avocado (sliced)
  • optional diced bell peppers (sautéed)
  • optional diced onions (sautéed)
  • optional spinach or kale (wilted)
  • optional fresh cilantro
  • optional sour cream or Greek yogurt
  • optional hot sauce

Method
 

  1. Crack 2 to 3 eggs into a bowl and whisk until uniform and frothy.
  2. Add a pinch of salt and pepper to the eggs; optionally, add garlic powder.
  3. Heat a non-stick skillet over medium heat and add butter or cooking oil.
  4. Pour the eggs into the skillet; allow to sit for 20 seconds, then stir gently.
  5. Scramble the eggs slowly until they are slightly wet and then remove from heat.
  6. In the same skillet, add the rinsed black beans and heat over medium-low for 2 minutes.
  7. Add spices like cumin and chili powder if desired.
  8. Warm the tortilla in a microwave covered with a damp paper towel or in a dry skillet until pliable.
  9. Lay the warm tortilla flat, starting assembly with a strip of cheese down the center.
  10. Top the cheese with scrambled eggs, then add the black beans.
  11. Add any optional ingredients like salsa and avocado on top.
  12. Fold the bottom of the tortilla up over the filling, fold the sides, and roll tightly.
  13. Serve immediately or wrap in foil for on-the-go breakfast.
