Ingredients
  

  • 1 cup rolled oats or oat flour
  • 1 scoop protein powder about 30 grams
  • 1 ripe banana
  • 2 eggs
  • 1 teaspoon baking powder
  • a pinch salt
  • 1/2 cup milk dairy or plant-based
  • 1 cup Greek yogurt plain, full-fat or low-fat
  • to taste honey or maple syrup for sweetness, optional
  • 1 teaspoon vanilla extract optional
  • to taste toppings fresh berries, sliced bananas, chopped nuts, granola, etc.

Method
 

  1. Preheat your waffle iron.
  2. Blend the rolled oats into a flour-like consistency using a blender.
  3. Add the banana, eggs, protein powder, baking powder, salt, and milk to the blender.
  4. Blend the mixture until completely smooth.
  5. Let the batter rest for about five minutes.
  6. Spray the waffle iron lightly with cooking oil.
  7. Pour about half a cup of batter into the center of the iron.
  8. Close the lid and cook for 4-5 minutes or until golden brown.
  9. While waffles are cooking, prepare your yogurt topping by mixing Greek yogurt with sweetener and vanilla extract if desired.
  10. Serve the waffle topped with the yogurt mixture and additional toppings of your choice.
