- Crack eggs into a bowl and whisk until yolks and whites are combined.
- Heat a nonstick pan over medium-low heat with a small pat of butter or drizzle of olive oil.
- For scrambled eggs: Pour whisked eggs into the pan, let sit for 20 seconds, then gently stir from edges to center until soft curds form. Remove when slightly wet.
- For an omelette: Pour eggs into the pan, cook until the bottom sets, then add chicken and desired toppings, fold in half, and slide into the wrap.
- For sunny-side up eggs: Cook eggs directly in the pan until whites are set but yolks are still runny.
- Season cooked chicken with salt, pepper, and desired spices, then cook in a separate pan until golden and cooked through.
- Warm the tortilla in a dry skillet for 15-20 seconds on each side.
- Assemble the wrap: Lay the tortilla flat, add chicken, then eggs, followed by cheese, vegetables, and sauce.
- Fold the bottom of the tortilla over the filling, then fold in the sides, and roll tightly away from you.
- Serve hot or wrap for on-the-go meals.
