Ingredients
  

  • 2-3 pieces Fresh eggs
  • 0.5-0.75 cup High-quality cottage cheese
  • to taste Salt
  • to taste Black pepper
  • to taste Optional toppings (sliced avocado, cherry tomatoes, etc.)

Method
 

  1. Heat a non-stick pan over medium-low heat and melt a small pat of butter.
  2. Crack the eggs into a bowl and whisk until combined.
  3. Pour the eggs into the pan and let them sit for about twenty seconds.
  4. Gently push the eggs from the edges toward the center, letting them sit again.
  5. Repeat the pushing motion every twenty seconds until the eggs are slightly wet, about 3-4 minutes.
  6. Remove from heat and spoon cottage cheese into a bowl.
  7. Top cottage cheese with scrambled eggs and chosen toppings.
  8. Season generously with salt and pepper.
