Ingredients

  • 2-3 each fresh eggs
  • 1 cup shredded cheese options: sharp cheddar, Monterey Jack, pepper jack, Mexican blend, mozzarella, queso Oaxaca
  • to taste optional add-ins bell peppers, onions, cooked bacon, breakfast sausage, spinach, diced tomatoes, jalapeños, black beans
  • 1 tablespoon cooking oil or butter
  • to taste salt and black pepper
  • to taste seasonings optional: garlic powder, paprika, cumin, dried herbs, cayenne pepper

Method
 

  1. Crack the eggs into a bowl and whisk until fully blended.
  2. Season the eggs with salt, pepper, and any desired spices.
  3. Heat a non-stick skillet over medium-low heat and add a small pat of butter.
  4. Pour in the whisked eggs and gently cook until they are slightly undercooked, about 3 minutes.
  5. Remove the eggs from heat when they still look wet and glossy.
  6. Sauté any vegetables in the pan until softened.
  7. Place one tortilla on a flat surface and sprinkle cheese on half of it.
  8. Spread the cooked eggs evenly on the cheese, then add any additional ingredients and another sprinkle of cheese on top.
  9. Fold the tortilla in half, pressing down gently to seal the edges.
  10. Heat a clean skillet over medium heat and cook the quesadilla for 3-4 minutes per side until golden and crispy.
  11. Remove from pan, let it rest for 2 minutes, then cut into wedges.
  12. Serve with toppings like salsa, sour cream, or avocado.
