Ingredients
  

  • 2-3 large eggs
  • 1 large flour tortilla
  • 0.25 cup shredded cheese (your choice)
  • 1 teaspoon butter or oil

  • Microwave or dry pan for warming tortillas

Method
 

  1. Crack the eggs into a bowl and add a splash of milk or water. Season with salt and pepper and beat until well combined.
  2. Heat a pan over medium heat and add the butter or oil, allowing it to melt.
  3. Pour the beaten eggs into the pan and let them sit for about 20 seconds until they start to set.
  4. Gently push the eggs from the edges toward the center, allowing uncooked egg to flow to the edges.
  5. When the eggs are mostly cooked but still slightly wet, sprinkle the cheese on top and turn off the heat.
  6. Warm the tortilla in the microwave for 15 seconds to make it pliable.
  7. Spoon the cheesy eggs into the center of the tortilla and add any additional toppings.
  8. Fold the bottom edge of the tortilla over the filling, then fold in the sides, and roll tightly to secure.
  9. Optionally, toast the wrapped burrito seam-side down in the pan for about 30 seconds to seal it.
