- Heat a large non-stick skillet over medium heat.
- Crack two eggs into a small bowl and whisk them with a fork, adding a splash of milk (optional) and seasoning with salt and pepper.
- Spray the pan with cooking spray or add a pat of butter, then pour in the eggs.
- Scramble the eggs, letting them sit for about 30 seconds before stirring gently until cooked through but still slightly soft.
- Warm your tortilla in another skillet or microwave it for 20 seconds wrapped in a damp paper towel.
- Lay the warm tortilla flat and arrange your fillings in a horizontal line across the center (eggs first, then cheese, vegetables, and meat).
- Fold the left and right sides of the tortilla inwards, then roll the bottom edge up and over the fillings, tucking it under slightly.
- Continue rolling tightly until you have a complete wrap.
