- Take the cooked rice out of the fridge and break it up if clumpy.
- Heat a non-stick skillet over medium-high heat and add about a tablespoon of oil.
- Add the rice to the skillet, spreading it in an even layer and letting it sit for 1 minute to get crispy bits.
- Stir the rice for 3-4 minutes until heated through.
- Push the rice to one side of the pan and crack the eggs into the empty side. Scramble the eggs until soft and fluffy, then mix into the rice.
- Add your choice of vegetables and protein, if using.
- Drizzle soy sauce and sesame oil over the mixture, season with salt, pepper, garlic powder, and red pepper flakes to taste.
- Serve immediately, garnished with fresh green onions and optional toppings like sesame seeds.
