Ingredients

  • 1 lb sausage (smoked or Italian)
  • 2 lbs potatoes (red or Yukon Gold)
  • 2-3 tablespoons olive oil
  • 1-2 pieces bell peppers (any color), sliced
  • 1 piece onion, cut into wedges
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1-2 cups other vegetables (e.g., Brussels sprouts, green beans, zucchini)

Equipment

  • Sheet pan
  • Knife
  • Bowl
  • Spatula or tongs
  • Measuring cups and spoons

Method

  1. Preheat the oven to 400°F (375°F if using raw sausage).
  2. Cut the potatoes into 1 to 1.5-inch chunks and place in a bowl.
  3. Toss the potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  4. Spread the potatoes in a single layer on a sheet pan and bake for 15 minutes.
  5. While the potatoes bake, slice the sausage and prepare any other vegetables.
  6. After 15 minutes, remove the sheet pan from the oven and add the sausage, bell peppers, onions, and any other vegetables.
  7. Toss everything together on the pan to combine nicely.
  8. Return the pan to the oven and bake for an additional 25-30 minutes, stirring halfway through.
  9. Check for doneness: potatoes should be tender and sausage should be heated through (internal temp of 160°F for raw sausage).
  10. Let the dish sit for 5 minutes before serving.

Notes

Feel free to experiment with different types of sausage (e.g., chicken, turkey, bratwurst) for varied flavors. For a lighter version, you can reduce the amount of potatoes and increase the vegetables. This dish reheats beautifully and makes great leftovers for lunch. Ensure that the vegetables are cut into similar sizes for even cooking; mix them on the pan for better flavor melding. Using parchment paper on the baking sheet can simplify cleanup and prevent sticking.
