Ingredients
  

  • 1 lb shrimp, peeled and deveined
  • 8 oz pasta (angel hair, linguine, or spaghetti)
  • 4 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 0.5 cup white wine or chicken broth
  • 1 juice lemon
  • to taste salt and pepper
  • optional red pepper flakes
  • to garnish fresh parsley, chopped

Equipment

  • Large skillet
  • Large pot for boiling pasta
  • Tongs or a slotted spoon
  • Cutting board and knife
  • Measuring cups and spoons

Method
 

  1. Get a large pot of water boiling and add a generous amount of salt.
  2. While the water is heating, pat shrimp dry and season lightly with salt and pepper.
  3. In a large skillet, heat olive oil over medium-high heat.
  4. Add shrimp in a single layer and cook for about 2 minutes until pink, then flip and cook for another 2 minutes.
  5. Remove shrimp from pan and set aside.
  6. In the same pan, reduce heat to medium and add butter.
  7. Once melted, add minced garlic and sauté until fragrant, about 30 seconds.
  8. Pour in the white wine (or chicken broth) and let bubble for 2-3 minutes to cook off alcohol.
  9. Add lemon juice and red pepper flakes if desired.
  10. Drain pasta when cooked just under al dente, reserving a cup of pasta cooking water.
  11. Add drained pasta to the skillet, tossing to coat in the sauce, adding reserved pasta water as needed.
  12. Return cooked shrimp to the skillet and toss everything together for 1 minute to heat through.
  13. Garnish with chopped parsley and additional lemon juice before serving.
