- Heat a 12-inch skillet over medium-high heat.
- Add the ground beef, breaking it apart and cooking until mostly browned, with a hint of pink remaining.
- Drain any excess fat if necessary, leaving a tablespoon or two for flavor.
- Add diced onion and cook for about 3 minutes until softened.
- Stir in minced garlic and cook for another 30 seconds.
- Add rice to the skillet and toast for about 1 minute, stirring to combine.
- Pour in the beef broth and diced tomatoes, then add seasonings (salt, pepper, paprika).
- Bring to a boil, then reduce heat to low and cover tightly with a lid.
- Cook for 18 minutes without lifting the lid.
- After 18 minutes, check for doneness. If necessary, allow to cook an additional 2-3 minutes.
- Fluff rice and beef mixture with a fork before serving.
