Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onions, carrots, and celery; sauté until onions are translucent (about 5-7 minutes).
  3. Stir in minced garlic and cook for an additional minute.
  4. Add spices (if using) and toast for about 30 seconds.
  5. Pour in the broth and add lentils and diced tomatoes.
  6. Bring the mixture to a boil, then reduce heat and let it simmer until lentils are tender (about 30-45 minutes).
  7. Add fresh greens shortly before serving until wilted.
  8. Season with salt and pepper to taste, and finish with a splash of lemon juice if desired.
