- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- Cut the cold butter into the flour mixture using a pastry cutter or your fingers until it looks like coarse crumbs.
- In a separate bowl, whisk together the egg, cream, and vanilla. Pour this into the flour mixture and stir gently until just combined.
- Turn the dough onto a floured surface and pat it into a circle about one inch thick.
- Use a biscuit cutter to cut out circles and place them on the prepared baking sheet.
- Brush the tops with extra cream and sprinkle with sugar.
- Bake for 12 to 15 minutes until golden brown.
- While the biscuits bake, prepare the strawberry filling by tossing sliced strawberries with sugar in a bowl and letting them sit for at least 30 minutes.
- For the whipped cream, beat the cold heavy cream with powdered sugar and vanilla until soft peaks form.
- To assemble, split each biscuit in half, spoon strawberries and their juice over the bottom half, add whipped cream, and place the top half on top. Add more strawberries and whipped cream as desired.
