Ingredients
  

  • 6 egg whites approximately ¾ cup
  • 4 oz cooked turkey breast, diced
  • 1 tablespoon olive oil or butter
  • to taste salt and black pepper
  • 0.25 cup diced bell peppers optional
  • 1 cup fresh spinach optional
  • 0.25 cup sliced mushrooms optional
  • 2 tablespoons shredded cheese (cheddar or feta) optional
  • to taste fresh herbs (chives, parsley, or cilantro) optional

Method
 

  1. Preheat a non-stick skillet over medium-low heat.
  2. Whisk egg whites in a bowl, adding a splash of water, salt, and pepper.
  3. Add olive oil or butter to the preheated pan and let melt.
  4. Add diced turkey to the pan and cook for about 1 minute, stirring occasionally.
  5. If using vegetables, add them to the pan and let them soften for another 1-2 minutes.
  6. Pour the whisked egg whites into the pan and let sit undisturbed for 20 seconds.
  7. Gently push the cooked edges toward the center, allowing raw egg to flow to the edges.
  8. Continue this process every 15-20 seconds until the eggs are just slightly wet when removed from heat, about 3-4 minutes total.
  9. If using cheese, add it halfway through cooking to let it melt.
  10. Serve immediately, adding fresh herbs or hot sauce if desired.
