- Preheat your oven to 180°C (350°F).
- Melt the chocolate and butter in a microwave-safe bowl in 30-second intervals until smooth, or use a double boiler.
- In another bowl, whisk together the eggs, extra yolks, and sugar until light and frothy.
- Combine the melted chocolate mixture with the egg and sugar mixture, whisk until incorporated, then gently fold in the sifted flour and amaretto.
- Grease each ramekin with butter or cooking spray and dust with cocoa powder.
- Spoon about 1-2 tablespoons of the batter into each ramekin, add a teaspoon of chocolate ganache in the center, then cover with more batter, filling ramekins about 3/4 full.
- Place ramekins on a baking tray and bake for 12-13 minutes until the surface springs back when touched gently.
- Turn the cakes out onto serving plates, dust with icing sugar, and serve immediately.
