- Preheat your oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
- In a large bowl, melt the butter and whisk it with the sugars until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
- In another bowl, sift together the flour, cocoa powder, baking powder, salt, and cinnamon.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Gently stir in the diced apples, and add in nuts or toffee bits if desired.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 25-30 minutes. Check doneness with a toothpick; it should come out clean or with a few moist crumbs.
- Let the brownies cool slightly before slicing.
