Ingredients
  

  • 3 cups all-purpose flour
  • 1.5 teaspoons salt
  • 1 teaspoon baking powder
  • 2.5 teaspoons ground cinnamon divided
  • 1.75 cups granulated sugar
  • 1 cup vegetable oil like canola
  • 4 large eggs at room temperature
  • 0.25 cup orange juice fresh is best!
  • 1 tablespoon pure vanilla extract
  • 4 cups peeled, cored, and diced apples (about 4 medium apples)
  • 1 cup chopped walnuts optional

  • Two large mixing bowls
  • Whisk and spatula

  • Apple peeler/corer
  • Wire cooling rack

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a 10-inch tube or Bundt pan with non-stick spray and flour.
  2. In a large bowl, whisk together flour, salt, baking powder, and 2 teaspoons cinnamon.
  3. In another bowl, mix granulated sugar and vegetable oil for 1 minute, then add eggs one at a time, mixing well.
  4. Pour in vanilla extract and orange juice, mixing until smooth.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Toss diced apples with remaining 1/2 teaspoon cinnamon and fold into the batter along with walnuts if using.
  7. Spoon the batter into the prepared pan and smooth the top.
  8. Bake for about 1 hour and 15 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 30 minutes, then invert onto a wire rack to cool completely.
