Ingredients
  

  • 3 large firm, tart apples peeled, cored, and diced
  • 1 cup granulated sugar
  • 1 tbsp ground cinnamon
  • 2 cups all-purpose flour
  • 4 large eggs
  • 1/2 cup unsalted butter softened
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • pinch salt

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, toss diced apples with a bit of sugar and cinnamon.
  3. Cream the butter and sugar together until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition, then add vanilla extract.
  5. In a separate bowl, whisk together flour, baking powder, and salt.
  6. Gradually add the dry mixture to the butter mixture, alternating with milk, until just combined.
  7. Spread half of the batter into a greased loaf pan, top with half of the cinnamon-coated apples, and sprinkle with cinnamon sugar.
  8. Add the remaining batter, followed by the rest of the apples and another sprinkle of cinnamon sugar.
  9. Use a knife to gently swirl the layers together.
  10. Bake for 60-70 minutes, or until a toothpick in the center comes out clean.
  11. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
