- Preheat your oven to 350°F (175°C).
- In a bowl, toss diced apples with a bit of sugar and cinnamon.
- Cream the butter and sugar together until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then add vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry mixture to the butter mixture, alternating with milk, until just combined.
- Spread half of the batter into a greased loaf pan, top with half of the cinnamon-coated apples, and sprinkle with cinnamon sugar.
- Add the remaining batter, followed by the rest of the apples and another sprinkle of cinnamon sugar.
- Use a knife to gently swirl the layers together.
- Bake for 60-70 minutes, or until a toothpick in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
