  • 1/2 cup granulated sugar
  • 1 tablespoon unsalted butter
  • 1 wheel (375g or 13.2 oz) brie
  • 2 tablespoons brown sugar
  • 1/4 cup honey
  • 1/2 teaspoon balsamic vinegar
  • 1/3 cup fresh raspberries
  • Crackers or bread for dipping

Method
 

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a small saucepan over medium heat, melt the butter, then add the walnuts and granulated sugar, stirring continuously.
  3. Spread the caramelized walnuts on the prepared baking sheet to cool once they turn golden brown.
  4. Place the brie wheel in an oven-safe dish, remove the rind if desired, and sprinkle brown sugar over it.
  5. Bake the brie in the oven for 12-14 minutes, then let it rest for 5 minutes.
  6. In a microwave-safe bowl, mix honey and balsamic vinegar, heat for 1 minute, then stir in raspberries and let them soak for 2-3 minutes.
  7. Top the baked brie with the caramelized walnuts and raspberry mixture, drizzling with the remaining sauce, and serve with crackers or bread.
