Ingredients
  

  • 1 whole camembert cheese
  • 1 sheet puff pastry
  • 100 g turkey lardons
  • 2 medium potatoes, diced into small cubes
  • 1 medium onion, thinly sliced
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • to taste black pepper
  • optional fresh thyme or rosemary
  • 1 egg yolk for glazing

Method
 

  1. Preheat your oven to 350°F (180°C).
  2. In a skillet over medium heat, warm the olive oil and add the turkey lardons, cooking until golden brown.
  3. Add the onions and garlic to the skillet; let them soften and become fragrant.
  4. Stir in the diced potatoes and cook until tender, seasoning with black pepper to taste.
  5. Roll out the puff pastry and place the camembert in the center.
  6. Spoon the potato-lardon mixture over the camembert and sprinkle with fresh herbs if desired.
  7. Fold the pastry edges around the camembert, sealing tightly, and brush the top with egg yolk.
  8. Bake for 20–25 minutes until the pastry is golden brown, then let it rest before slicing.
