- Preheat your oven to 400°F (200°C).
- Lay one sheet of puff pastry flat on parchment paper, drizzle with honey, sprinkle with rosemary, thyme, and sea salt.
- Roll the pastry into a tight log and slice it lengthwise down the middle.
- Repeat the process with the second sheet of puff pastry.
- Line a baking tray with parchment paper and place the lid of the Camembert box in the center.
- Wrap the pastry strips around the lid to shape the spiral, then brush the surface with the beaten egg and sprinkle with herbs and salt.
- Remove the lid and place the Camembert wheel in the center, score the top, then drizzle with honey and olive oil.
- Bake for 25-30 minutes until the pastry is golden brown and the cheese is melted. Let it rest for 5 minutes before serving.
