Ingredients
  

  • 1 wheel Camembert cheese well-aged
  • 2 sheets puff pastry pre-rolled
  • as needed liquid honey
  • 2 tablespoons fresh rosemary finely chopped
  • 2 tablespoons fresh thyme finely chopped
  • 1 small egg lightly beaten (for glazing)
  • as needed sea salt flakes for sprinkling
  • 1 tablespoon olive oil

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Lay one sheet of puff pastry flat on parchment paper, drizzle with honey, sprinkle with rosemary, thyme, and sea salt.
  3. Roll the pastry into a tight log and slice it lengthwise down the middle.
  4. Repeat the process with the second sheet of puff pastry.
  5. Line a baking tray with parchment paper and place the lid of the Camembert box in the center.
  6. Wrap the pastry strips around the lid to shape the spiral, then brush the surface with the beaten egg and sprinkle with herbs and salt.
  7. Remove the lid and place the Camembert wheel in the center, score the top, then drizzle with honey and olive oil.
  8. Bake for 25-30 minutes until the pastry is golden brown and the cheese is melted. Let it rest for 5 minutes before serving.
