- Preheat the oven to 400°F (200°C).
- Mix all the seasonings for the fish in a small bowl and set aside 1 teaspoon for later.
- Rub the seasoning blend onto both sides of the fish filet and let it sit for 5 minutes.
- Heat 3 tablespoons of oil in a skillet over medium heat.
- Sear the seasoned fish for 1 minute on each side, then remove from the skillet.
- In the same skillet, sauté cherry tomatoes, olives, minced garlic, fresh herbs, reserved seasoning, and water for about 3 minutes.
- Place the seared fish back in the skillet, top with butter, and transfer to the oven.
- Bake for 10 minutes or transfer to a baking dish if the skillet isn’t oven-safe.
- Remove from the oven, garnish with additional fresh herbs, and serve immediately.
