Ingredients
  

  • 1 filet fish about 6–8 ounces
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1 tsp Cajun or Old Bay seasoning
  • ½ tsp red pepper flakes optional
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 tbsp cooking oil
  • 2 cups cherry tomatoes
  • ½ cup olives Kalamata or green, your choice
  • 2 sprigs fresh parsley
  • 2 sprigs fresh thyme
  • 3 cloves garlic minced
  • 2 tbsp water
  • 3 tbsp salted butter

Equipment

  • Skillet preferably oven-safe
  • Small mixing bowl
  • Spatula
  • Baking dish if skillet is not oven-safe
  • Sharp knife

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Mix all the seasonings for the fish in a small bowl and set aside 1 teaspoon for later.
  3. Rub the seasoning blend onto both sides of the fish filet and let it sit for 5 minutes.
  4. Heat 3 tablespoons of oil in a skillet over medium heat.
  5. Sear the seasoned fish for 1 minute on each side, then remove from the skillet.
  6. In the same skillet, sauté cherry tomatoes, olives, minced garlic, fresh herbs, reserved seasoning, and water for about 3 minutes.
  7. Place the seared fish back in the skillet, top with butter, and transfer to the oven.
  8. Bake for 10 minutes or transfer to a baking dish if the skillet isn’t oven-safe.
  9. Remove from the oven, garnish with additional fresh herbs, and serve immediately.
