Ingredients
  

  • 450 g large shrimp, peeled and deveined
  • 1 cup gluten-free breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • to taste Salt and pepper

Method
 

  1. Preheat your oven to 190°C (375°F) and grease your baking dish lightly with olive oil or cooking spray.
  2. In a medium bowl, combine the gluten-free breadcrumbs, Parmesan, garlic, parsley, olive oil, salt, and pepper. Stir until evenly coated.
  3. Arrange the shrimp in a single layer in the prepared baking dish. Spoon the breadcrumb mixture generously over each shrimp and press gently.
  4. Place the dish into the preheated oven and bake for 12–15 minutes until the breadcrumbs are golden brown and the shrimp are pink and opaque.
  5. Remove the casserole from the oven, let it rest for a minute, and garnish with lemon wedges before serving.
