- In a medium saucepan, whisk together the sugar and cornstarch. Gradually add the milk, whisking until smooth.
- Cook the mixture over medium heat, stirring constantly until it thickens and begins to bubble.
- Remove the custard from the heat and stir in the butter and vanilla extract until fully melted.
- In a separate bowl, lightly beat the egg yolks. Temper the yolks by gradually adding a small amount of the hot milk mixture, whisking continuously. Pour back into the saucepan and cook for an additional 2-3 minutes.
- Remove from heat and let it cool slightly. Fold in half of the sliced bananas.
- In a serving dish, layer the vanilla wafers, pudding mixture, and remaining banana slices, building up layers until all ingredients are used.
- Cover and refrigerate for at least 4 hours or overnight. Before serving, whip the heavy cream until stiff peaks form and spread over the top.
