Ingredients
  

  • 4 pieces ripe bananas, sliced
  • 2 cups milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 cup unsalted butter
  • 1 tsp vanilla extract
  • 3 large egg yolks
  • 1 package vanilla wafers
  • 1/2 cup heavy cream

Method
 

  1. In a medium saucepan, whisk together the sugar and cornstarch. Gradually add the milk, whisking until smooth.
  2. Cook the mixture over medium heat, stirring constantly until it thickens and begins to bubble.
  3. Remove the custard from the heat and stir in the butter and vanilla extract until fully melted.
  4. In a separate bowl, lightly beat the egg yolks. Temper the yolks by gradually adding a small amount of the hot milk mixture, whisking continuously. Pour back into the saucepan and cook for an additional 2-3 minutes.
  5. Remove from heat and let it cool slightly. Fold in half of the sliced bananas.
  6. In a serving dish, layer the vanilla wafers, pudding mixture, and remaining banana slices, building up layers until all ingredients are used.
  7. Cover and refrigerate for at least 4 hours or overnight. Before serving, whip the heavy cream until stiff peaks form and spread over the top.
