  • 2 large boneless, skinless chicken breasts
  • 1/2 cup milk
  • 1/2 cup dried Italian breadcrumbs
  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy whipping cream
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1/4 teaspoon black pepper

Method
 

  1. Preheat your oven to 275°F (135°C) and grease a 9x13-inch baking dish.
  2. Slice each chicken breast horizontally into two even pieces and pound them to about 1/4-inch thick.
  3. Dip each chicken cutlet into milk, then press into breadcrumbs to coat.
  4. Heat butter in a skillet and cook the chicken until golden brown on both sides.
  5. Transfer the browned chicken to the baking dish and bake for about 10 minutes.
  6. In the same skillet, sauté minced garlic for about 30 seconds until fragrant.
  7. Pour in chicken broth, scraping up any browned bits, and bring to a boil.
  8. Stir in heavy cream and let it boil slightly before reducing heat to low.
  9. Add Parmesan cheese, basil, and black pepper, and let sauce simmer for about 5 minutes.
  10. Serve the chicken with basil cream sauce spooned over the top.
