- Pat the chicken dry and season generously with salt, pepper, garlic powder, and paprika.
- Preheat the grill to medium-high heat.
- Cook the chicken for about 6-7 minutes per side until cooked through.
- Brush both sides of the chicken with BBQ sauce and cook for another minute per side.
- Place a slice of cheese on top of each chicken piece after removing from the grill to melt.
- For the crockpot method, season chicken thighs, place in the crockpot, pour BBQ sauce and a splash of broth, and cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken in the crockpot and mix well with sauce.
- For using rotisserie chicken, shred and toss with BBQ sauce, warm in a skillet or microwave.
- Assemble the sandwich by choosing your bread and adding the chicken, cheese, and desired toppings.
