Ingredients
  

  • 4 breasts or thighs Boneless Skinless Chicken
  • to taste Salt
  • to taste Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • 1 cup BBQ Sauce Your favorite flavor
  • 4 slices Cheese Cheddar, Pepper Jack, or Provolone
  • 4 buns or rolls Bread Ciabatta, Sourdough, Brioche, or Whole Grain
  • to taste Fresh Toppings Lettuce, tomatoes, pickles, avocado

Method
 

  1. Pat the chicken dry and season generously with salt, pepper, garlic powder, and paprika.
  2. Preheat the grill to medium-high heat.
  3. Cook the chicken for about 6-7 minutes per side until cooked through.
  4. Brush both sides of the chicken with BBQ sauce and cook for another minute per side.
  5. Place a slice of cheese on top of each chicken piece after removing from the grill to melt.
  6. For the crockpot method, season chicken thighs, place in the crockpot, pour BBQ sauce and a splash of broth, and cook on low for 6-8 hours or high for 3-4 hours.
  7. Shred the chicken in the crockpot and mix well with sauce.
  8. For using rotisserie chicken, shred and toss with BBQ sauce, warm in a skillet or microwave.
  9. Assemble the sandwich by choosing your bread and adding the chicken, cheese, and desired toppings.
