- Preheat your oven to 325°F (160°C) and cut the beef slices in half to create 12 equal pieces.
- Pound the beef slices to a thickness of about 3-6mm using a plastic bag or parchment paper.
- In a bowl, mix chopped garlic, parsley, grated cheese, breadcrumbs, salt, and pepper for the filling.
- Spread a generous spoonful of the filling onto each slice of beef, leaving a small border around the edges.
- Place a slice of prosciutto on top of the filling, roll up each slice, and secure with toothpicks.
- Heat olive oil in a large pot and brown the beef rolls in batches, starting with the seam side down.
- Add beef broth, crushed tomatoes, sliced garlic, and Italian seasoning to the pot, stirring well.
- Return the beef rolls to the pot, cover, and transfer to the oven to simmer.
- After 1.5 to 2 hours, remove from the oven, thicken the sauce with a roux made from flour and cooking liquid, then adjust seasoning and garnish with parsley.
