Ingredients
  

  • 900 g boneless beef round cut into thin slices (3-6mm thick)
  • 12 cloves garlic large
  • 1/2 cup flat-leaf parsley chopped (about one small bunch)
  • 1 cup Parmesan or Romano cheese grated
  • 2 tbsp seasoned breadcrumbs
  • to taste salt
  • to taste black pepper freshly ground
  • 12 slices prosciutto or substitute with chicken ham
  • 2 tbsp olive oil
  • 2 cups beef broth
  • 800 g crushed Italian tomatoes one can
  • 2 tsp dried Italian seasoning
  • 2 tbsp all-purpose flour
  • a pinch sugar if needed

  • Meat mallet or rolling pin

Method
 

  1. Preheat your oven to 325°F (160°C) and cut the beef slices in half to create 12 equal pieces.
  2. Pound the beef slices to a thickness of about 3-6mm using a plastic bag or parchment paper.
  3. In a bowl, mix chopped garlic, parsley, grated cheese, breadcrumbs, salt, and pepper for the filling.
  4. Spread a generous spoonful of the filling onto each slice of beef, leaving a small border around the edges.
  5. Place a slice of prosciutto on top of the filling, roll up each slice, and secure with toothpicks.
  6. Heat olive oil in a large pot and brown the beef rolls in batches, starting with the seam side down.
  7. Add beef broth, crushed tomatoes, sliced garlic, and Italian seasoning to the pot, stirring well.
  8. Return the beef rolls to the pot, cover, and transfer to the oven to simmer.
  9. After 1.5 to 2 hours, remove from the oven, thicken the sauce with a roux made from flour and cooking liquid, then adjust seasoning and garnish with parsley.
