Ingredients
  

  • 450 g flank steak, thinly sliced against the grain
  • 1/4 teaspoon baking soda
  • 1 teaspoon cornstarch
  • 1 teaspoon neutral oil (vegetable or canola)
  • 1 teaspoon oyster sauce
  • 1 tablespoon water
  • 1 tablespoon light soy sauce
  • 1 teaspoon dark soy sauce
  • 2 teaspoons ketchup
  • 2 teaspoons oyster sauce
  • 1/4 teaspoon sugar
  • 1/4 teaspoon sesame oil
  • 60 ml water
  • 2 tablespoons cooking oil
  • 280 g small onions, quartered (about 3 small onions)

Method
 

  1. In a medium bowl, mix together flank steak, baking soda, cornstarch, oil, oyster sauce, and water; stir until coated and let marinate for at least 15 minutes.
  2. In a small bowl, whisk together light soy sauce, dark soy sauce, ketchup, oyster sauce, sugar, sesame oil, and water; set aside.
  3. Heat your wok over high heat until smoking, add one tablespoon of oil, and sear the beef in a single layer for 30 seconds; stir-fry until about 75% cooked, then remove and set aside.
  4. Add another tablespoon of oil to the wok, stir-fry the onions until slightly caramelized for about 60 to 90 seconds, and then remove from the wok.
  5. Pour the sauce into the wok, bring to a boil, simmer for 15 seconds, then add the beef and onions back; stir everything for another 30 seconds and serve immediately over rice.
