  • 4 turnips
  • 4 leeks
  • 2 pieces onions (studded with cloves)
  • 2 cloves cloves
  • 1 bouquet bouquet garni (thyme, bay leaf, parsley)

Method
 

  1. Place the beef in a large pot and cover it with cold water.
  2. Bring to a boil, skimming off any foam or impurities from the surface.
