Ingredients
  

  • 225 g flank or skirt steak thinly sliced against the grain
  • 225 g fresh Hong Kong-style noodles
  • 2 tbsp Shaoxing wine or dry sherry
  • 2 tsp cornstarch
  • 1/4 tsp salt
  • 1 cup low-sodium beef broth
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp Shaoxing wine
  • 2 tbsp cornstarch
  • 1 tsp sugar
  • 1/4 tsp Chinkiang vinegar
  • 1/4 tsp white pepper
  • 4 tbsp peanut oil divided
  • 4 heads baby bok choy quartered
  • 4 cloves garlic minced
  • 1 inch ginger minced

  • Large nonstick or carbon steel skillet
  • Whisk

Method
 

  1. Marinate the beef slices with the marinade ingredients for at least 10 minutes.
  2. Whisk together all the sauce ingredients until smooth.
  3. Boil the noodles according to package instructions, drain, and air-dry.
  4. Heat 2 tablespoons of oil in a skillet and cook the noodles until golden brown on both sides.
  5. Add 1 tablespoon of oil to the skillet and sear the marinated beef, removing it once browned.
  6. Stir-fry the onions and carrots in the remaining oil, adding ginger and garlic.
  7. Incorporate bok choy until wilted, then add the sauce and return the beef to the skillet.
  8. Pour the mixture over the crispy noodles and garnish with sesame seeds or scallions.
