- Preheat your oven to 375°F (190°C). Peel and slice the potatoes into thin rounds and place them in a bowl of cold water.
- Chop the onion and mince the garlic.
- In a large skillet, heat the olive oil over medium heat. Add ground beef, onions, and garlic. Cook until the beef is browned and the onions are translucent. Season with salt, pepper, and thyme.
- Drain the potatoes and pat them dry. In a 9x13-inch baking dish, layer the potatoes, then the cooked beef mixture. Spread sour cream over the top and sprinkle with cheddar cheese.
- Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 20 minutes, or until cheese is bubbly and slightly golden.
