Ingredients
  

  • 2 tablespoons extra-virgin olive oil
  • 1 extra-large onion chopped
  • 2 tablespoons water (Optional)
  • 2 pounds lean ground beef
  • 4 cloves garlic minced
  • 2 tablespoons fresh ginger root grated
  • 1 serrano chile pepper finely chopped
  • 2 teaspoons fresh cilantro chopped
  • 1 tablespoon ground coriander
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon ground turmeric
  • 3 potatoes peeled and diced
  • 1 28-ounce can diced tomatoes
  • 1 cup frozen green peas
  • 1 teaspoon garam masala

Method
 

  1. Heat the olive oil in a large saucepan over medium-high heat. Add the chopped onion and cook until soft and starting to brown, about 12 minutes.
  2. Add the ground beef, garlic, ginger, serrano chile, and cilantro. Cook and stir until the beef is browned and crumbly, about 10 to 15 minutes.
  3. Stir in the spices: coriander, salt, cumin, cayenne pepper, and turmeric. Cook for about 5 minutes to combine flavors.
  4. Add the diced potatoes and canned tomatoes. Cover and simmer until the potatoes are tender, about 15 minutes.
  5. Stir in the frozen green peas and cook until the sauce thickens slightly, about 10 to 15 minutes. Sprinkle the garam masala on top, cover, and let stand for 5 minutes before serving.
