Ingredients

  • 1 lb Flank Steak, sliced thinly against the grain
  • 1 cup Vegetable Oil for Frying
  • 1 piece Red Bell Pepper, cut into 1.5 cm pieces
  • 1 piece Yellow Onion, cut into 1.5 cm pieces
  • 4 cloves Garlic, thinly sliced
  • 4–6 tablespoons Cornstarch for dredging and marinade
  • 1 large egg Beaten Egg for marinade
  • 2 teaspoons Cornstarch for marinade
  • ½ teaspoon Salt
  • 1 tablespoon Cold Water for marinade
  • ⅓ cup Water for sauce
  • 2 tablespoons Honey or Sugar for sauce
  • 3 tablespoons Ketchup for sauce
  • ⅓ cup Hoisin Sauce for sauce
  • 1 tablespoon Soy Sauce for sauce
  • 1 teaspoon Oyster Sauce for sauce
  • 1 tablespoon Sweet Chili Sauce for sauce
  • 2 tablespoons Rice Vinegar for sauce
  • 1 teaspoon Red Pepper Flakes
  • 2 teaspoons Cornstarch for sauce

Equipment

  • Large Wok or Skillet
  • Tongs or Spatula for stirring
  • Mixing Bowls
  • Paper Towels for draining fried beef
  • Measuring Tools

Method

  1. In a large bowl, whisk together the marinade ingredients—beaten egg, cornstarch, salt, and cold water. Add the sliced beef and toss until well-coated. Cover and refrigerate for 30 minutes.
  2. While the beef marinates, mix all the sauce ingredients in a separate bowl until smooth and glossy. Set aside.
  3. After marinating, dredge the beef slices in cornstarch, shaking off excess.
  4. Heat vegetable oil in a wok over medium-high heat. Fry the beef in batches until golden brown and crispy on both sides. Drain on paper towels.
  5. Pour off most of the oil, leaving about 1 tablespoon. Sauté onions, bell peppers, and garlic for 3–4 minutes until fragrant. Add the prepared sauce and let simmer until thickened.
  6. Return the beef to the wok, tossing gently to coat everything in the sauce.

Notes

Fresh ingredients make a big difference in flavor, so choose quality produce. The marination process is vital for tenderness; don’t skip it! Store leftovers in an airtight container for up to 3 days and reheat gently in a skillet. For a healthier version, consider baking the beef or using an air fryer. Feel free to experiment with different vegetables like broccoli or snap peas to enhance your dish. Enjoy your cooking!
