Ingredients
  

  • 1 kg beef (gîte, paleron, or macreuse), cut into chunks
  • 3 onions, thinly sliced
  • 2 tablespoons whole-grain mustard
  • 50 g butter
  • 1 tablespoon oil
  • 30 g brown sugar
  • 500 ml dark Belgian beer Choose a high-quality dark beer for the best results.
  • 2 slices gingerbread Smear the gingerbread slices with mustard.
  • 2 bay leaves
  • 3 sprigs thyme
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Equipment

  • Large heavy-bottomed pot or Dutch oven
  • Wooden spoon
  • Sharp knife for slicing onions
  • Tongs for handling beef
  • Frying pan or air fryer for fries

Method
 

  1. Heat butter and oil in a large pot over medium heat.
  2. Add the beef chunks and sear them until golden brown on all sides, then remove and set aside.
  3. In the same pot, add the sliced onions and cook them slowly until caramelized, then sprinkle in the brown sugar.
  4. Return the beef to the pot and stir in the mustard, vinegar, beer, bay leaves, and thyme; mix well.
  5. Smear the gingerbread slices with mustard and lay them on top of the stew.
  6. Cover the pot and let the stew simmer gently for 2.5 to 3 hours.
  7. While the stew simmers, prepare your fries.
  8. Once the stew is ready, ladle it into bowls and serve alongside the fries.
