- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Lightly flour the work surface and roll out the puff pastry.
- Cut three thin strips from the edges of the pastry for decoration.
- Gently remove the top rind of the brie.
- Arrange the fresh blackberries on top of the brie, spoon on blackberry jam, and sprinkle with thyme leaves and black pepper.
- Place the brie in the center of the pastry and brush edges with egg wash.
- Fold the pastry over the brie, sealing the edges and pinching the seams underneath.
- Braid the reserved pastry strips and place them on top of the wrapped brie.
- Brush the entire pastry with remaining egg wash.
- Bake for 30–35 minutes until the pastry is golden brown.
- Let rest for 5–10 minutes before serving.
