Ingredients
  

  • 1/4 cup unsalted butter
  • 1/2 cup brown sugar packed
  • 2 cups fresh blueberries
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a small saucepan, melt 1/4 cup of unsalted butter, then stir in 1/2 cup of brown sugar until bubbly; pour into a 9-inch round cake pan.
  3. Arrange 2 cups of blueberries over the brown sugar mixture in the cake pan.
  4. In a medium bowl, whisk together flour, baking powder, and salt.
  5. In a large bowl, beat 1/2 cup softened butter and 1 cup granulated sugar until light and fluffy.
  6. Add eggs one at a time, mixing well after each addition; then mix in 1 teaspoon vanilla extract.
  7. Gradually add the dry ingredients to the butter mixture, alternating with 1/2 cup milk, ending with dry ingredients.
  8. Pour batter over the blueberries in the cake pan, spreading evenly.
  9. Bake for 40-45 minutes, until a toothpick comes out clean.
  10. Let the cake cool in the pan for 10 minutes before inverting onto a serving plate.
