Ingredients
  

  • 1 cup wheat flour
  • 1 cup sugar
  • 1/2 tablespoon baking powder
  • 2 large carrots peeled and grated
  • 1/2 cup oil
  • 2 large eggs
  • q.s. Brigadeiros as many as you want
  • q.s. wheat flour for coating brigadeiros
  • q.s. icing sugar optional, for dusting

Method
 

  1. Mix the dry ingredients: Combine 1 cup of wheat flour, 1 cup of sugar, and 1/2 tablespoon of baking powder in a bowl.
  2. Blend the carrot mixture: Peel and grate 2 large carrots, then blend with 1/2 cup of oil and 2 eggs until smooth.
  3. Combine wet and dry ingredients: Pour the carrot puree into the dry mixture and stir gently until combined.
  4. Prepare the baking tray: Grease and flour a baking tray and spread the batter evenly.
  5. Add the brigadeiros: Coat the brigadeiros in flour and arrange them on top of the cake batter.
  6. Bake the cake: Place in a preheated oven at 180°C (350°F) for about 1 hour and 15 minutes until golden.
  7. Unmold and serve: Cool for a few minutes, unmold, and optionally dust with icing sugar.
