Ingredients
  

  • 4 pieces Boneless, Skinless Chicken Breasts cut into strips
  • 2 tablespoons Olive Oil
  • 1 tablespoon Cajun Seasoning
  • 4 cloves Garlic minced
  • 2 tablespoons Butter
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese grated
  • 1/2 cup Ricotta Cheese
  • 1 tablespoon Smoked Paprika
  • 1 lb Fettuccine Pasta
  • Salt and Pepper to taste
  • 1/4 cup Reserved Pasta Water

Method
 

  1. Heat olive oil in a large skillet over medium-high heat and season chicken strips with Cajun seasoning, smoked paprika, salt, and pepper.
  2. Add chicken to the skillet and cook for 6-8 minutes, until golden brown and cooked through, then set aside.
  3. In the same skillet, melt butter over medium heat and add minced garlic; cook for 1-2 minutes until fragrant.
  4. Pour in heavy cream, stirring to combine, and bring to a simmer; then add Parmesan and ricotta cheese, stirring until smooth.
  5. Cook fettuccine according to package directions and reserve 1/4 cup of pasta water before draining.
  6. Toss the cooked pasta in the creamy Cajun sauce, adding reserved pasta water as needed for consistency.
  7. Stir the cooked chicken back into the skillet, mix until combined and heated through, and garnish with fresh parsley before serving.
