Ingredients
  

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 1 unit green bell pepper, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional)
  • 1 cup long-grain rice
  • 2 1/2 cups chicken broth
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/4 cup chopped fresh parsley
  • 2 green onions thinly sliced
  • to taste Salt and pepper

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the ground beef and break it apart as it cooks until browned; drain excess grease.
  3. Toss in chopped onion, green bell pepper, and celery; cook for 5-7 minutes until softened.
  4. Stir in minced garlic, Cajun seasoning, smoked paprika, and cayenne pepper; cook for an additional minute.
  5. Add the long-grain rice to the skillet and mix to coat with the beef and vegetable mixture.
  6. Pour in chicken broth, bring to a boil, then reduce heat to low, cover, and let simmer for 20 minutes.
  7. Once the rice is cooked, stir in butter and parsley; season with salt and pepper.
  8. Garnish with thinly sliced green onions before serving.
