- Cook the bowtie pasta in a large pot of salted boiling water until al dente, then drain and set aside.
- Season steak slices with Cajun seasoning, garlic powder, salt, and pepper. Sear in a large skillet over medium-high heat with olive oil and 1 tablespoon of butter until browned, about 2-3 minutes per side. Transfer to a plate and set aside.
- Reduce heat to medium, add remaining butter to the skillet, and cook the onion until softened, about 3 minutes. Stir in minced garlic and cook for another 30 seconds.
- Sprinkle flour over the onion mixture, cook for 1 minute while stirring constantly. Gradually whisk in beef broth and heavy cream until smooth. Add cream cheese until it melts, then stir in Parmesan, mozzarella, and cheddar cheeses until thick and creamy.
- Return steak to the skillet, add cooked pasta, and toss to coat in the sauce. Adjust seasoning as needed and garnish with green onions or parsley before serving.
