Ingredients
  

  • 4 pieces boneless skinless chicken breasts sliced into strips
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp salt to taste
  • 1/4 tsp black pepper to taste
  • 1 tbsp Fresh parsley chopped for garnish
  • 12 oz fettuccine pasta
  • 2 tbsp butter for fettuccine
  • 1/2 cup reserved pasta water

Equipment

  • Pot for boiling pasta
  • Measuring cups and spoons
  • Garlic press or mincer
  • Colander for draining pasta

Method
 

  1. Season the chicken strips with Cajun seasoning, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat, add chicken, and cook for 5-6 minutes until fully cooked and golden brown. Remove chicken and set aside.
  3. In the same skillet, add chicken broth and heavy cream, simmer for 2-3 minutes until it thickens slightly. Return chicken to the skillet.
  4. Cook fettuccine pasta according to package instructions, reserving 1/2 cup of pasta water before draining.
  5. Melt 2 tbsp of butter in the skillet over medium heat, sauté minced garlic for 1-2 minutes, then add reserved pasta water and season with salt and pepper.
  6. Stir in Parmesan cheese and let the sauce thicken.
  7. Add cooked fettuccine to the skillet, tossing to coat in the sauce, then add chicken and stir until well combined.
