- Season the chicken strips with Cajun seasoning, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat, add chicken, and cook for 5-6 minutes until fully cooked and golden brown. Remove chicken and set aside.
- In the same skillet, add chicken broth and heavy cream, simmer for 2-3 minutes until it thickens slightly. Return chicken to the skillet.
- Cook fettuccine pasta according to package instructions, reserving 1/2 cup of pasta water before draining.
- Melt 2 tbsp of butter in the skillet over medium heat, sauté minced garlic for 1-2 minutes, then add reserved pasta water and season with salt and pepper.
- Stir in Parmesan cheese and let the sauce thicken.
- Add cooked fettuccine to the skillet, tossing to coat in the sauce, then add chicken and stir until well combined.
