Ingredients

  • 1 pound bowtie pasta
  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chicken broth
  • pinch red pepper flakes optional

Equipment

  • Large skillet or frying pan
  • Pot for boiling pasta
  • Colander for draining pasta
  • Wooden spoon or spatula
  • Measuring spoons and cups

Method

  1. Start by boiling water for your pasta. Once it’s rolling, toss in the bowties and cook until they’re al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil and butter over medium-high heat. Add the chicken pieces and let them sear until golden brown and cooked through, about 6-8 minutes.
  3. Toss in the minced garlic, Cajun seasoning, paprika, salt, and pepper. Stir and cook for another minute until fragrant.
  4. Reduce the heat to medium and pour in the heavy cream and chicken broth. Let it simmer gently, stirring occasionally. Add the Parmesan and mozzarella cheeses, stirring until melted and smooth.
  5. Add the cooked pasta to the skillet and toss it in the creamy sauce. Serve immediately while hot, garnishing with extra Parmesan or parsley if desired.

Notes

Don’t skip browning the chicken for depth of flavor. Use freshly grated Parmesan for the best texture and flavor. You can adjust the spice level by varying the amount of Cajun seasoning used. If you have leftovers, store them in an airtight container in the fridge. They’ll keep for up to three days. When reheating, add a splash of milk to restore the creaminess. Enjoy your delicious homemade dish!
