Ingredients
  

  • 2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 12 oz penne pasta
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning

  • to garnish fresh parsley, chopped

Method
 

  1. Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente.
  2. In a bowl, mix the chicken pieces with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper until well coated.
  3. Heat olive oil in a large skillet over medium heat and cook the seasoned chicken pieces for 5-6 minutes until browned and cooked through; remove and set aside.
  4. In the same skillet, add the sliced sausage and cook for 3-4 minutes until slightly browned; remove and set aside.
  5. Melt butter in the skillet, add minced garlic, and sauté for about 1 minute; then pour in chicken broth, scraping the skillet's bottom.
  6. Stir in heavy cream and Parmesan cheese, letting the sauce simmer for 3-4 minutes until thickened.
  7. Add the cooked chicken, sausage, and pasta to the skillet, tossing together in the creamy sauce; adjust the sauce consistency with reserved pasta water if necessary.
  8. Garnish with fresh parsley and serve hot.
