Ingredients
  

  • 1 lbs boneless skinless chicken breasts, cut into 1-inch cubes
  • 18 oz bowtie pasta (farfalle)
  • 4 tablespoons butter
  • 6 cloves garlic, minced
  • 0.5 cup all-purpose flour
  • 4 cups milk
  • 12 oz Velveeta cheese, cubed
  • 6 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • to taste Salt and black pepper
  • 2 tablespoons chopped parsley or chives for garnish

Method
 

  1. Start by bringing a large pot of salted water to a boil. Add the bowtie pasta and cook according to the package instructions until al dente. Drain the pasta and set aside.
  2. In a bowl, toss the chicken cubes with olive oil, Cajun seasoning, garlic powder, and smoked paprika until evenly coated. Heat a large skillet over medium-high heat and add the seasoned chicken. Cook for about 6-8 minutes until the chicken is golden and cooked through. Remove from the skillet and set aside.
  3. Reduce the heat to medium and melt the butter in the same skillet. Add minced garlic and cook for about 30 seconds until fragrant. Whisk in the flour and cook for a minute to form a roux. Slowly pour in the milk, whisking continuously until smooth and slightly thickened.
  4. Lower the heat and add cubed Velveeta and softened cream cheese. Stir until melted and smooth. Gradually add shredded mozzarella and grated Parmesan, stirring until thick and creamy. Season with salt and pepper to taste.
  5. Add the cooked chicken and drained pasta to the skillet, tossing gently to coat in the sauce. Let rest on low heat for a minute to meld flavors. Garnish with chopped parsley or chives before serving warm.

Notes
