Method
- In a bowl, mix Cajun seasoning, smoked paprika, garlic powder, salt, and pepper. Toss chicken strips in the spice mix until evenly coated.
- Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook about 6-7 minutes, flipping until browned and fully cooked. Remove chicken and set aside.
- While chicken is cooking, bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Drain and set aside, saving a little pasta water.
- In the same skillet, sauté minced garlic for about 1 minute. Pour in chicken broth, scraping up bits from the bottom, then add heavy cream and simmer lightly.
- Add cooked spaghetti to the sauce and toss to coat. Stir in grated Parmesan cheese and cook for 1-2 minutes until creamy. Add reserved pasta water if sauce is too thick.
- Add cooked chicken back to the skillet and mix. Top with chopped parsley and serve hot.

Notes
For enhanced flavor, marinate chicken in the spice mix for at least 30 minutes before cooking. You can substitute shrimp or tofu for the chicken and use any long pasta like linguine or fettuccine. To store leftovers, keep them in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat with a bit of milk or cream to restore creaminess.
