- Fill a large pot with salted water and bring it to a boil. Add the rotini and cook until al dente, about 8-9 minutes; drain and reserve ½ cup of the pasta water.
- Place the steak tips in a bowl and season with Cajun seasoning, garlic powder, smoked paprika, salt, and black pepper; mix well.
- Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat and sear steak strips for about 1-2 minutes per side until browned and cooked through; remove to a plate.
- Lower heat to medium and melt 2 tablespoons of butter in the same skillet; add minced garlic and cook for 30 seconds until fragrant.
- Pour in heavy cream and milk, then whisk in cream cheese until smooth and creamy.
- Stir in Parmesan, mozzarella, and ½ teaspoon of Cajun seasoning; continue stirring until cheeses melt and sauce thickens.
- Add rotini to the skillet and fold into the sauce; if needed, thin out with reserved pasta water.
- Transfer creamy pasta to plates or bowls, top with Cajun steak tips, and garnish with fresh parsley.

Notes
For extra flavor, add a pinch of red pepper flakes to the sauce. This dish is best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of milk or cream to maintain creaminess. Feel free to substitute chicken or shrimp for steak and use your preferred types of cheese for variation.
