- Boil a large pot of salted water and cook the twisted pasta until al dente. Drain and reserve about ½ cup of pasta water.
- In a large skillet, heat olive oil over medium-high heat. Season chicken strips with Cajun seasoning, garlic powder, salt, and pepper, then sear until golden brown and cooked through, around 5-6 minutes. Remove and set aside.
- Melt butter in the same skillet, add minced garlic, and cook until fragrant. Stir in chicken broth and heavy cream, scraping up any browned bits.
- Lower the heat and mix in cream cheese, mozzarella, and Parmesan until the sauce is creamy. Add a splash of reserved pasta water if it gets too thick.
- Add the cooked pasta and chicken to the sauce, stirring gently to combine. Let simmer for 2 minutes, then garnish with fresh parsley and serve.
