Ingredients
  

  • 1 lb linguine pasta
  • 2 tbsp olive oil
  • 1 lb beef sirloin or flank steak thinly sliced against the grain
  • 1 tbsp Cajun seasoning
  • 4 tbsp unsalted butter
  • 1/2 cup grated Parmesan cheese

Method
 

  1. Fill a large pot with water, add a pinch of salt, and bring it to a boil.
  2. Toss in the linguine and cook until al dente—about 8-10 minutes.
  3. Reserve a cup of pasta water and then drain the pasta.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Add the thinly sliced beef strips and sprinkle with Cajun seasoning.
  6. Cook the beef until browned on all sides—about 3-4 minutes, then remove from skillet.
  7. In the same skillet, melt butter over medium heat.
  8. Add minced garlic and sauté until fragrant—about 1 minute.
  9. Pour in a splash of reserved pasta water and stir in the grated Parmesan cheese until melted and smooth.
  10. Add the cooked linguine and beef strips back into the skillet.
  11. Toss everything until pasta is evenly coated in the sauce. Adjust seasoning if desired.
  12. Serve hot, garnished with extra Parmesan and chopped parsley.
