Ingredients
  

  • 1 lb sirloin or ribeye steak tips cut into bite-sized strips
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • to taste salt & black pepper to taste
  • 12 oz rotini pasta
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup whole milk
  • 4 oz cream cheese softened
  • 1 cup grated Parmesan
  • 1 cup shredded mozzarella
  • ½ tsp Cajun seasoning
  • to taste salt & pepper to taste
  • q.s. fresh parsley chopped for garnish

Method
 

  1. Boil a large pot of salted water and cook the rotini until al dente, about 8–9 minutes. Reserve ½ cup pasta water and drain.
  2. Pat steak tips dry, sprinkle with seasonings, and heat olive oil and butter in a skillet over medium-high heat. Cook steak pieces for 1–2 minutes per side until golden brown. Remove and cover to keep warm.
  3. In the same skillet, reduce heat to medium, melt butter, add minced garlic, and cook for about 30 seconds. Add heavy cream and milk, then whisk in cream cheese until smooth. Stir in Parmesan, mozzarella, and Cajun seasoning until thickened. Season to taste.
  4. Add the cooked rotini to the skillet with the sauce, tossing to coat. Serve topped with seared steak tips and garnish with fresh parsley.

Notes

If you’re missing an ingredient, consider substituting chicken or shrimp for steak. You can also use penne or fusilli pasta. To store leftovers, keep them in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of milk. For a lighter dish, try zucchini noodles, turkey breast, or whole wheat pasta!
