- Boil a large pot of salted water; cook the cheese tortellini according to package instructions. Drain and set aside.
- Season both sides of the steaks with Cajun seasoning, smoked paprika, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat. Cook the steaks for about 3 to 4 minutes on each side.
- During the last minute of cooking, add two tablespoons of butter and minced garlic to the pan, basting the steaks.
- Remove the steaks from the skillet and let them rest.
- In the same skillet, add the remaining butter and garlic, cooking for about 1 minute.
- Pour in the heavy cream, bring to a light simmer, and mix in Parmesan and mozzarella until smooth.
- Season the sauce with salt, black pepper, and cayenne pepper if desired.
- Add the cooked tortellini to the sauce, tossing gently to coat.
- Slice the rested steak and serve on top of the creamy tortellini, garnished with parsley.
